{"id":6163,"date":"2011-08-17T13:46:15","date_gmt":"2011-08-17T20:46:15","guid":{"rendered":"http:\/\/www.todayifoundout.com\/?p=6163"},"modified":"2014-12-19T04:59:44","modified_gmt":"2014-12-19T12:59:44","slug":"bread-goes-stale-about-six-times-faster-in-the-refrigerator-than-at-room-temperature","status":"publish","type":"post","link":"http:\/\/www.todayifoundout.com\/index.php\/2011\/08\/bread-goes-stale-about-six-times-faster-in-the-refrigerator-than-at-room-temperature\/","title":{"rendered":"Bread Goes Stale About Six Times Faster in the Refrigerator than at Room Temperature"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/www.todayifoundout.com\/wp-content\/uploads\/2011\/08\/stale-bread1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-6168\" title=\"stale-bread\" src=\"http:\/\/www.todayifoundout.com\/wp-content\/uploads\/2011\/08\/stale-bread1-e1313611843447.jpg\" alt=\"\" width=\"340\" height=\"267\" \/><\/a><a href='http:\/\/www.todayifoundout.com' title='Interesting Facts'>Today I found out<\/a> bread goes stale about six times faster in the refrigerator then when kept at room temperature.<\/p>\n<p>On the surface, this might seem counter intuitive; after all, everyone knows if you want to keep food fresher longer, you put it in the fridge.\u00a0 The problem stems from what bread is made out of, specifically starch molecules, and how those starch molecules react in certain conditions.<\/p>\n<p>Before we begin to dissect why bread goes stale faster in the fridge, it\u2019s important to know what bread is actually made of.\u00a0 Breads are essentially networks of wheat flour protein molecules (called gluten) and starch molecules.\u00a0 Suspended in this network of molecules is carbon dioxide that is produced by the fermentation of yeast inside the dough. This gives bread its fluffy, foam-like texture.\u00a0 Begin to play around with the amounts of these ingredients and other fancy tasting additives and you can get many different types of textures and tastes.<\/p>\n<p>The starch inside of this mixture has its own characteristics.\u00a0 Starch molecules are made of two base components, both are long chain sugar molecules.\u00a0 Glucose (sugar) is classified as a monosaccharide, meaning one glucose unit. But if you link these units together, they can become a polysaccharide or complex carbohydrate (be afraid Atkins lovers, be very afraid).\u00a0 The two units are Amylose and Amylopectin.
